Aurora sole fillets
- Sole fillets, prawns
- Aurora sauce (= Béchamel sauce + chicken stock + butter + Jermayo tomato sauce)
- Flat-leaf parsley or other fresh herbs
- Salt and pepper
Roll the sole fillets (or any other white fish), season with salt and pepper, before steaming them. Coat the plates with a little sauce and place the sole fillets on top. Garnish with the parsley and peeled prawns.
This dish can also be made with scampi instead of prawns. You might also like to add a spoonful of mustard seeds and/or small cubes of blanched pepper.
